Juicy Cheese Burgers

Hey there everyone, i am back within 2 days and thats surprising even for me. I wanted to start with some thing simple for our 1st recipe which is loved by almost everyone. Delicious meat and cheese with soft buns. Have you ever tried the fresh burgers rather than the one's you find in Mcdonalds, somehow you despise the dry burgers from Mcdonalds right after having that fresh thick patty instead of a thin dry one but you cannot go for the fresh burgers since they are not cheap, specially if you are in KSA. Man they screw you big time when it comes to american cuisine, be it steaks, burgers or anything else. Every time you wanna dine out in places like these better be prepared to lighten your wallets.
 I am gonna be sharing multiple kinds of cuisines(including american) and i will help you out to cook something close to what you had in those restaurants. It wont be the same because they have access to good cuts of meats and you might not be able to get those that easily.

1st thing that you need to know before you are going to cook these burgers is how do you want these burgers to be cooked(Medium Rare, Medium, Well done). My preference is Medium since the burger is not like you are swallowing sand through your mouth, yeah! i hate well done burgers. The burger needs to be full of moisture once its done which brings out the flavor of the meat and also spikes the taste of the burger. 

There are also two ways how these can be cooked based on whats available at you house. you can either cook it on a grill or a pan with a thick base(if you have a grill pan then its better). The best way a burger can be cooked is on top of a grill full of hot charcoal since you get that smoky flavor from the coal along with the juices of that delicious meat but this can only be done either while you are out on a picnic or you have a grill in your backyard or a balcony. If you do not have that facility you can also cook the burger on a grill pan or a pan with a thick base, We want a thick base so that the heat on the base of the pan is not just concentrated on the center of the pan which can mess up your burger.

Preparation
You need to prep your station before you start cooking your burger because you have to get everything together once your burger is done and if you delay for a long time you end up with a cold patty which might not end up tasting that well. You need to get cut your veggies 1st and that includes a slice of tomato and 1 leaf of iceberg lettuce(you can also flatten it in your palm instead of slicing it). You can use condiments like Mayo and ketchup or you can make this awesome burger sauce which i tend to make from scratch. Mix 1 tsp of mustard, 2 tsp of mayo, 1 tsp of ketchup, quarter of a lemons juice, half a tsp of onion powder, Half a tsp of garlic powder, pinch of salt n pepper with another pinch of sugar. Mix these things well and viola , you have a delicious sauce which goes perfect with your burger. So you have your veggies and sauce ready at your station. Please get some Potato buns if you can or else  you can also go with any kind its up to you. Get some Cheddar slices of slices of American cheese. 
Prepping the patty is quite simple, some people opt to mix the salt and pepper in the ground beef but adding salt to the meat ends up sweating the beef which might end up breaking the patties while they are on the top of the grill. Form a ball with approximately a quarter pound or 125 gms of ground beef and flatted in such that there are no cracks in the patty, make sure to add a dent at the center so that you do not end up with a bulge at the center of the patty. Make as many as you like and after wards sprinkle the salt and pepper on top and the bottom of the patty(you can add some Onion and garlic powder as it helps elevate the flavor of the burger. 

Make sure that when you are going for the ground beef, it should be a combination of 70% Beef and 30% Fat because the fat acts as an adhesive and binds the patty together instead of breaking it.


1st Method(BBQ)
You will need to heat up your grill to high, the indication will be that you cannot withstand the heat on your hand more than 5 second(its a bit unorthodox but i do it. Just make sure that the heat is not low or else you patty will break and you will end up with making sloppy joes. Once the grill is hot enough, butter the grill so that your burger doesn't stick to the grill. Put your patty on top of the grill and you can hear the instant sizzle once the patty comes in contact with your grill(if you dont hear the sizzle that means your grill is not hot enough). Keep the patty on the grill for 3 and half minutes and then flip your burger and add the slice of cheese on top of the cooked side and you can watch the cheese melt on top of that delicious burger. After giving a 3 and half minute on the other side remove the burger and keep it aside. Resting the burger on the side is important because the meat sweats a little after its removed from the grill which might make the buns soggy. Butter your buns and put on top of the grill and toast them. 

Assembly
Take the base and add the Burger sauce, then comes the lettuce then comes the beautiful patty then comes the slice of Tomato and some Pickles(optional). You can arrange as you like and add as many things as you like(Go crazy, its your burger).

2nd Method(Grill Pan).
Heat the pan until its sizzling hot. Coat the base of the pan with some butter then add your patty to the pan. Keep one side on the pan for about 4 minutes and then flip the patty and add the slice of cheese on the cooked side then give another 4 minutes to the other side. Remove the patty from the pan and let it rest on the side and toast your buns. If you want to get that smoky flavor, take a big sheet of foil and make a small bowl of it and then add some butter in that bowl. Heat up a small piece of coal so that it could fit in that small aluminum bowl. Once the other side of the burger is almost done, put this foil bowl in the same pan and add the coal inside that bowl carefully and the cover it with tin foil for about 1 and a half minute then you can rest it on the side. this ends up giving the patty a smoky flavor.

This has been the most easiest thing to cook during my hangouts with friends or family or even a last minute gathering at my house.We generally just go straight from the supermarket to the parks to do it and its that easy.
