Lebanese Roasted chicken

While living in the Kingdom of Saudi Arabia there were many things which made me fall in love with it, in the beginning it was the International Indian School (both Riyadh and Jeddah) later when i got to the home kitchen. I had the passion for cooking since i was in the 5th Grade, I became fond of cooking but i used to be very clumsy and used to make the kitchen a very untidy place after which my mother scolded and taught me how to be good at it and for that i will be thankful to her till my last breath. By the time i moved to Jeddah i was in the 9th grade and by that time most of my friends were roaming around in cars and i used to tag along with them, it was really fun. While doing my Engineering in India i used to visit yearly and the Different and beautiful construction of different kinds of structures enhanced my love for the profession i was preparing for.
So there it is School, cars, buildings and finally the Arabian food. Arabian food always had a special place in my heart, It had a distinctive taste not to spicy but the speciality of the Arabian food is the very essence that lures you in to the delicious food. Here in the KSA there is not just one type of Arabian food, there is Lebanese, Turkish, Iraqi, Irani, Moroccan and many more.
I bought my oven yesterday and decided to cook up a Lebanese Chicken Roast which looks and tastes phenomenal. The ingredients in this recipe were quite simple but i had to use a new ingredient named "sumac". Sumac is a spice which is little purple crystals which looks beautiful and is the core ingredient in many Lebanese dishes.

The ingredients for the Lebanese Roasted Chicken:

  • Skinned chicken
  • Chopped Garlic  
  • Lemon zest
  • Lemon juice 
  • Cumin powder
  • Black pepper
  • Sumac
  • Paprika
  • Vinegar
  • Olive oil


Procedure:

  • Take the chicken and add lemon juice of 1 lemon, vinegar, some olive oil and salt and massage the chicken which helps soften the meat of the chicken.
  • Mix all the dry spices apply evenly to the chicken and keep it refrigerated in the marinade for about two to three hours. Its even better if it marinades over night
  • Pre heat the oven to 170 degree Celsius and place the marinated chicken in the oven for exactly 45 minutes.  
Make some Garlic sauce by putting some garlic paste, mashed potato, egg whites, lemon juice and olive oil in a blender. Chop some basil or Parsley and mix it in the paste.

Have it with some pita Bread or regular Chapatis. Try it, I am sure that you will love it.
